In the last couple of years, chocolate and wine pairings have become very trendy. I prefer the term “epidemic”.

Both, good chocolate and wine contain polyphenoles, tannins and are both highly acidic. These characteristics tend to dry out your mouth and leave you with a bitter aftertaste, certainly not what you would want in a harmonious food “relationship”. And because chocolate is often sweeter than wine, the combination of the 2 will almost always leave a sour taste in your mouth, bringing out the worst qualities in each other.

When you MUST have wine with your chocolate, choose a dessert wine, perhaps an ice wine. Otherwise remember; not EVERYTHING needs to go with wine.
